Fresh Leaf Co. Fajita Salad Boats
Spice up your meals with these delightfully spicy Fresh Leaf Co. salad boats!
ingredients
1 70g bag of Fresh Leaf Co.
1 avocado (thinly sliced)
2 bell peppers (thinly sliced)
2 chillies (thinly chopped)
1 onion (thinly sliced)
1 lime (for garnishing)
Handful of coriander (finely chopped)
3 chicken breasts (diced)
Salsa
Sour cream
Fajita seasoning (to taste)

how to make…
1. Mix your diced chicken breast pieces with your finely sliced peppers and onion. Add your Fajita seasoning and combine.
2. Heat a griddle pan until smoking hot. Add your fajita chicken combo and cook on a high heat for 5-8 minutes. Keep the mixture moving ensuring an even char on all sides!
3. Once your Fajita mixture is cooked it’s time to build your boats! Grabbing your stand ‘n stuff tortilla boats add a bed of Fresh Leaf Co. red + green mix into a tortilla boat to start your layering.
4. Place your fajita chicken combination on top of your salad base.
5. Layer a generous dollop of tangy salsa and cool sour cream.
6. Garnish your fajita boats with some freshly chopped coriander, chillies, sliced avocado and a lime for good measure!
